Job Title: Quality Controller (Sausage Production)

Location: Bury St Edmunds, Suffolk

Pay: From £13.57 per hour (+ 1.5x Overtime)

Hours: 06:00 – 14:30 | Monday to Friday

Passionate about food quality? Direct Table Foods is looking for a detail-driven Quality Controllerto ensure our premium sausages meet the highest safety, taste, and consistency standards before hitting supermarket shelves.

You’ll be our line defender for food safety—monitoring everything from raw meat temperatures and recipe specs to final packaging seals.

What You'll Do

  • Line Audits & Hygiene Checks: Conduct GMP, fabrication, and QMS audits alongside ATP, visual, and environmental swabbing.

  • Sausage Quality & Sensory Testing: Lead sample collection, temperature monitoring, and daily sensory evaluations

  • Equipment Verification: Calibrate and check critical testing equipment, including temperature probes, scales, and salt analysis tools.

  • Non-Conformance & Root Cause: Investigate customer complaints, internal non-conformances, and supplier issues to prevent repeat errors.

  • Culture & Compliance: Champion site health & safety, promote a strong food-safety culture, and train team members on quality standards.

What We’re Looking For

  • Previous Quality Control experience in food manufacturing (meat or high-care experience preferred).

  • Solid understanding of HACCP, GMP, and food safety accreditation standards.

  • Practical skills in temperature verification, swabbing, and QMS record-keeping.

  • Proficient with MS Office (Word, Excel, Outlook).

  • Strong communication skills and an internal auditor certification (desired, but not essential).
